Salmon with Sun-dried Tomatoes and Spinach

  • Evaporated Milk or Heavy Cream
  • Chicken Stock
  • White Wine
  • Unsalted Butter
  • Spices
    • Crushed Red Pepper (as hot as I want it)
    • Chipotle or any other spice that I have on hand 1/2. 3/4 teaspoon
    • White Pepper 1/2 teaspoon
    • Granulated or powdered garlic half teaspoon or more
    • Salt and pepper (I use Kinders 'The Blend') half teaspoon to start. Add a little more halfway if needed. The caldo should take care of the rest of the saltiness
    • Caldo de Pollo
  • Black Olives
  • Garlic (as much as I'm in the mood for!)
  • Half large onion or whole small onion
  • Sun Dried Tomatoes chopped as much as I want but maybe no more than a cup
  • A lot of spinach cut up into thinish slices
  • Package of Salmon from Costco

​1. Heat up skillet on medium heat. I used a cast iron this time only because my stainless steel was occupied.
2. When hot enough, lower to 5 (one step under medium)
3. add olive oil to coat the pan
4. add salmon skin side down. Cook maybe 3-4 min?
add seasoning to top of fish while it's cooking.
5. Flip salmon over and cook for about 2-3 min until it looks like the picture.
Peel off the skin. If the skin is a pain in the ass to take off, flip it back for another 30 seconds. When done, it should still look raw in the middle! This is good because it'll cook more.
6. Set aside the skin to make salmon chips
7. lighty season the naked salmon as you'd like.
8. Cook the skin to make salmon chips, then set aside
9. add a tiny bit more oil if needed
10. pour in some white wine to deglaze. 1/4 to 1/2 cup?? I don't know, I just pour it.
11. Add 2 tablespoons of butter and let melt
12. add garlic and onion and sauté until it smells great. (about 5 min.)
13. Add sundried tomatoes and some sundried tomato oil
14. add olives
15. stir up that shit
16. add some Caldo de Pollo. I use about a teaspoon maybe?
17. Add half a cup of chicken stock
18. add whole can of condensed milk (or one cup of heavy cream).
19. Let it cook. How long? About 10 min? I just feel it.
20. Add salt and pepper as needed
21. add about 75% of the chopped spinach and mix.
22. Cook for about 1 min
23. turn off heat
24. add the salmon back to the pan and let sit for about 5 min off the heat.

  • Measurements are not accurate. I don't use measuring tools.  I just kind of eye it.*
